Applesauce muffins

On a quest to use up MORE apples from our apple-picking trip at Labonté, I came up with these muffins using about 10 apples to make homemade applesauce, and cutting down on the sugar by using a banana for sweetness.
SO GOOD, and the (pretty picky) 2nd grader has asked for one every day for his school lunch!

Applesauce Muffins

Ingredients
  1. 1/2 cup butter, softened
  2. 1/2 cup white sugar
  3. 1 super ripe banana
  4. 2 eggs
  5. 1 tsp vanilla
  6. 1 cup whole wheat flour
  7. 1 cup AP flour
  8. 1 tbsp baking powder
  9. 1 tsp baking soda
  10. 1/2 tsp cinnamon
  11. 1/4 tsp allspice
  12. 2 cups of applesauce***
for the strudel topping
  1. 1/2 cup AP flour
  2. 1/4 cup of old fashioned rolled oats
  3. 1/4 cup of high fibre cereal ( I used Bob's Red Mill, or you could use ground flax seed or just omit)
  4. 1/8 cup of white sugar
  5. 1/8 cup of brown sugar
  6. 1/2 tsp cinnamon
  7. 1/3 cup of chilled butter
Instructions
  1. Using an electric mixer cream together the butter, sugar, and banana. Add in the eggs and vanilla, beat until fluffy.
  2. In a separate bowl combine the flours, baking powder and soda, cinnamon and allspice.
  3. Add to the butter mixture, mix in the applesauce.
  4. To make the strudel: Mix all the dry ingredients together and then cut in the butter, mixing until it's all clumpy and the dry ingredients are coated with butter.
  5. Spoon (I use a big ice cream scoop) into prepared muffin cups and sprinkle with the strudel.
  6. Bake in a preheated oven for about 20 mins at 400 degrees.
Notes
  1. ***To make my applesauce I peeled and chopped about 10 good-sized apples then simmered them with a bit of water for about 25 mins. I left it pretty lumpy so the muffins would have some texture. You could also use store bought unsweetened applesauce of course!
