Mini Chocolate Chip Zucchini muffins

The ingredients:
2-1/2 cups  AP flour
2 tbsp. unsweetened cacao powder
1/2 cup rolled oats
1 tbsp. flax seeds
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp baking soda
1 egg
1-1/4 cup milk
1/2 cup liquid honey
1/4 cup melted butter (or applesauce!)
4 tbsp orange juice
1 cup super finely shredded zucchini
1/2 cup chocolate chips

Mix all the dry ingredients
Mix all the wet ingredients
Add the zucchini and chocolate chips (don’t overstir)
Fill greased or lined mini-muffin tins about 3/4 full.
Bake at 375 for 15-18 minutes or until tops are firm.
Eat.

    you could make them even healthier by using carob powder & carob chips 🙂
