½ cup of sugar
¼ cup of unsweetened applesauce
1 cup very ripe bananas
½ cup pure pumpkin
2 cups of AP flour
1 teaspoon baking soda
1 cup of mixed berries
Blend butter and applesauce together.
Add in the eggs and mashed bananas.
Add in the flour and baking soda.
Toss the berries in flour and then fold into batter
Place mini cupcake liners in the pan and fill the liners 2/3 full with batter. (Or use a silicone muffin tin)
Bake at 350° for 13-14 minutes or until a toothpick inserted into the center comes out clean.
