Pork-Veggie-Pasta Soup

Also known as: The Soup Everyone Ate. And liked!

I had a package of lean ground pork and after having the biggest little one say “Your meatballs are the worst!” I thought I’d have to come up with something else for dinner.

Cue, a fridge full of random vegetables, some fun pasta shapes, and lo and behold, a soup everyone loved and ate so fast I couldn’t even take a picture!

The ingredients:

One of the normal sized packages of Lean ground pork
2 tbsp. olive oil
3 carrots, chopped
1 small zucchini, chopped
4-5 cups of water, vegetable or chicken broth
1 tbsp. bbq sauce
1 tbsp. worcestershire sauce
1 tbsp. balsamic vinegar
a dash of pork seasoning
salt and pepper
to taste
1½ cups of dry pasta ( I used small star pasta)

Brown the pork in the olive oil in a heavy-bottomed or cast-iron pot. Add in the carrots and zucchini and brown for a few minutes. Add in the rest of the stuff. Just throw it all in!
Except for the pasta. Don’t add that yet.
Wait for I dunno….15 minutes? Let the veggies and pork all simmer.
NOW, add in the pasta for its specified cooking time (My stars were 10 minutes)
Serve with some grated cheese. If you’ve got an itty-bitty baby, just mash it all up.
Yum.
