The little one has been a pain to feed lately. He wants bread, and only bread.
Crunchy, soft whatever.
Could be because he’s getting over (another) cold, but I wanted him to get some protein and fruit, so I threw these together.
He ate NINE.
½ cup plain greek yogurt
½ cup mango purée
¾ cup dry oats (any kind)
1 tbsp. vegetable oil
1 tsp. cinnamon
1 tsp. vanilla
Blend everything in a blender! Pour onto a preheated and buttered pan or griddle and cook through on both sides. (When the first side has little bubbles, flip them over)
I made little tiny ones because they’re more fun to eat, and easier to freeze. They were about 2 inches across.
