Avocado and Banana Brownies (What??)

I’ve been making lots of black bean brownies, and even did some black bean and date brownies; but was wanting something a little different for the big kid’s lunch box. He (says) he doesn’t like avocados OR bananas, and you can’t even taste them in this recipe I came up with. He’s been happily eating them all week.
I win!

Avocado and Banana Brownies

Ingredients
  1. 50 grams dark chocolate (I used 70%)
  2. 1/4 cup semi sweet chocolate chips
  3. 1 ripe avocado
  4. 2 eggs
  5. 1 tbsp. water
  6. 1 tsp. vanilla
  7. 1 banana
  8. 1/2 cup cacao powder
  9. 1/2 cup AP flour
  10. 1/4 cup white sugar
  11. 1/2 tsp baking soda
  12. sprinkle with icing sugar if you want.
Instructions
  1. Melt the two chocolates together, either over a double boiler or using the microwave on medium for 30 seconds at a time. Let cool slightly.
  2. In a food processor or blender, whirl the avocado, melted chocolate, eggs, water, vanilla, and banana until smooth.
  3. In a separate bowl mix together the cacao powder, flour, sugar, and baking soda. Then mix the wet and dry ingredients.
  4. Pour into a greased metal 8" baking tin, or I used a silicone one and didn't grease it at all.
  5. Bake in a preheated 350 degree oven for about 20-25 minutes.
  6. Let cool and dust with icing sugar.
  7. They freeze great!
