I’ve been making lots of black bean brownies, and even did some black bean and date brownies; but was wanting something a little different for the big kid’s lunch box. He (says) he doesn’t like avocados OR bananas, and you can’t even taste them in this recipe I came up with. He’s been happily eating them all week.

- 50 grams dark chocolate (I used 70%)
- 1/4 cup semi sweet chocolate chips
- 1 ripe avocado
- 2 eggs
- 1 tbsp. water
- 1 tsp. vanilla
- 1 banana
- 1/2 cup cacao powder
- 1/2 cup AP flour
- 1/4 cup white sugar
- 1/2 tsp baking soda
- sprinkle with icing sugar if you want.
- Melt the two chocolates together, either over a double boiler or using the microwave on medium for 30 seconds at a time. Let cool slightly.
- In a food processor or blender, whirl the avocado, melted chocolate, eggs, water, vanilla, and banana until smooth.
- In a separate bowl mix together the cacao powder, flour, sugar, and baking soda. Then mix the wet and dry ingredients.
- Pour into a greased metal 8" baking tin, or I used a silicone one and didn't grease it at all.
- Bake in a preheated 350 degree oven for about 20-25 minutes.
- Let cool and dust with icing sugar.
- They freeze great!
