"Use up those apples!" apple cake

Ingredients
- 8 apples, peeled, sliced and chopped
- 1 tbsp. ground cinnamon
- 4 tbsp. orange juice
- ½ cup of white sugar
- 1½ cups of white sugar
- 3 cups AP flour
- 3 tsp. baking powder
- 4 eggs
- 2 tsp. vanilla extract
- ½ cup plain greek yogurt
- 4 tbsp. orange juice
- ½ cup vegetable oil
- ½ cup apple sauce
Instructions
- Toss the first 4 ingredients together.
- In a separate bowl, mix together the sugar, flour, baking powder. Add in the eggs, then the vanilla, yogurt, oj, oil and applesauce.
- Stir together.
- Butter a bundt pan or a decorative mold cake pan. Or, I use a silicone bundt pan and don’t grease it at all.
- Pour a third of the batter into the pan, add half the apple mix, pour another third of the batter, followed by apples, and then finish with the rest of the batter on top.
- Bake in a 350° preheated oven for 1½ hours. (I covered it with tin foil for the first hour and removed it for the rest)
