Mini peach oatmeal muffins

Beautiful, succulent peaches. And nobody wants to eat them whole but me. “It’s like eating sunshine!” I said.
They didn’t go for it.
On my quest to force them to eat sunshine I came up with these.
Four glorious fresh peaches, all hidden within these healthy muffins.

And they ate them. Ha!

Ingredients:

4 fresh peaches
1-1/2 cups rolled oats
1-3/4 cups AP flour (or throw some whole wheat in there)
1/2 cup brown sugar
3 tbsp. wheat germ
3 tsp. baking powder
pinch of salt
1 tsp. vanilla
pinch of cinnamon
1 egg
1 snack size container of unsweetened applesauce
1/2 cup milk
1/2 cup milk or semi-sweet chocolate chips

Preheat the oven to 450º
Blend the peaches into a purée, set aside.
Mix all the dry ingredients.
Mix all the wet ingredients and then fold in the peaches
Add in the chocolate chips. Eat a few from the bag.
Fill greased or lined mini muffin tins 3/4 full.
Lower the oven to 350º and bake the muffins for about 13-14 minutes or until the tops are golden brown.
EAT!
